Fermented foods are part of traditional diets around the world. Some of these foods are making a comeback, for example, kefir, sauerkraut, kombucha, and kvass. These foods contain live organisms that are important for healthy digestion. They also present nutrients to our bodies in a way that allows for better absorption.

I recently found a study that compared fermented orange juice to regular orange juice. The authors concluded that carotenoids (the compounds that give orange juice and carrots their orange colour) were more bioavailable from the fermented orange juice.
